The Zolfino Bean is a tipical variety of some Tuscan areas. Until few years ago it had been abandoned due to difficulties in cultivation and extreme sensitivity to the backwaters. Recently, thanks to its special properties, it has been discovered again. The name’s origin is related to the pale yellow color typical of the sulfur. The extremely thin skin makes it easily digestible compared to other legumes, with a thick consistency almost as a cream. In combination with many other typical dishes, it has an intense flavor and it handles cooking very well. That’s way we decided to propose it to our demanding customers.
