In the old Tuscan tradition, especially on Sunday, the grandmothers cooked pieces of meet in the tomato since early morning. At lunch time they took out the meat and used the dark and creamy sauce to flavor pasta, that was the first course. The main course was made with the meat removed. \nThis sauce was called ""finto"" which means “fake” because even if the meat had been cooked inside at the end there was not meat in the sauce! It was left only the unforgettable smell the fantastic taste and some residual little piece of fillets. \nWe tryed to retrace this tradition using the same procedure only in bigger dimension.
