Spelt is really an historical ingredient of the tuscan tradition. Known since the age of the Etruscans, in Roman times this cereal became a subject of wedding ceremonies: the bride used to offer cakes and bread made with spelt to the groom’s family. The spelt soups are a key element of tuscany’s tradition cuisine, especially in Garfagnana and in Lucca’s area. A variant of the traditional recipe is prepared adding big pieces of porcini mushrooms in order to make the flavor even more delicious.
